1. Heat the olive oil in a saucepan and add the sliced onion
2. When the onion starts to fry, sauté the potatoes cut into very thin slices
3. Salt, pepper and add the saffron
4. Add just enough water to cover the potatoes and leave to simmer for about 25 minutes
5. Fry the pork jowl in a frying pan on a medium-high heat until crispy
6. Blend the potatoes to obtain a cream
7. Distribute the cream in the plates and complete with the sweet Italian peppers, the olives, the pork jowl and the tomatoes cut into strips
8. Decorate with chives
